Spinach Quiche with Walnuts and Feta

  • 190 g wheat flour
  • 85 g oat flakes
  • 6 tbs olive oil
  • 1.5 tbs gomasio


  • 600 g fresh spinach
  • 3 gloves garlic, chopped
  • salt & pepper
  • rub from half an orange
  • 200 ml cream
  • 2 eggs
  • 140 g feta-cheese
  • 2 hands full of walnuts, chopped finely

How to:

Step one:  Add the wheat flour, oat flakes, olive oil and Gomasio in a big bowl and mix it with your lovely hands. Add so much water that you can form a ball with the dough. It should’t be to drie and wet.. Find a good mix. Dough done.. work on the spinach.

Step two: Wash the spinach. Meanwhile add the garlic and like 4-5 tbs olive oil in a large cooking pot and heat it up till the garlic becomes slightly golden. (medium-high heat)

Add the spinach and put a lid on the pot. Do nothing for 2-3 min. Put off the lid and stir the spinach till it falls together (it takes like 5-6 min in total for 600g spinach).

Turn off heat add lots of pepper and a bit salt and some nutmeg. Stir it up again. Spinach is ready… Taste it!

Preheat the oven to 180 degrees.

Step three: Get rid of the unnecessary water from the spinach. Roll out the dough really thin and put it in a quiche form like mine. Put the quiche form with the dough in the oven for about 5-10 minutes. Meanwhile mix 2 eggs with the cream and get some rub from the orange.

Step four: Take out the quiche form. Add the spinach on the bottom of the dough. Add the rub from the orange on top. Add the egg/cream mixture on top and after that the chopped haselnuts. Now back in the oven for ~40-45 minutes. Enjoy!!
